1/2 c. granulated sugar
1/2 c. powdered sugar
1/4 c. flour
1/8 tsp. salt
1 (8 oz.) can of almond paste
2 egg whites
3 oz. pignoli nuts
powdered sugar for sprinkling

Directions:
Directions:
1. Preheat oven to 300º. Lightly grease 2 cookie sheets.

2. Sift sugars with flour and salt and set aside.

3. Break up almond paste with a wooden spoon and add egg white. Beat until well blended and the mixture is fairly smooth.

4. Stir in flour mixture until well blended.

5. Drop mixture by slightly rounded teaspoons about 2 inches apart on the cookie sheets.

6. Lightly press your thumb to make the cookies about 1.5 inches around. Press pignolis into each cookie.

7. Bake 20 to 25 minutes or until golden. Let cookies cool on a wire rack. Sprinkle with powdered sugar.
