Ingredients: 2 Eggs Shredded Cheese (any flavor you choose) or any cheese you would like to use (i.e. sandwich cheese, etc.) Small amount of fresh Arugula Small amount of fresh Spinach 1/4 cup of chopped mushrooms Small amount of chopped onion Dash of Salt Dash of Pepper Pam Spray

Directions:Chop your mushroom into small pieces as well as your onions and set aside. Gather all your other ingredients and set aside. In a small bowl break and scramble your three eggs until blended well. Place a fry pan on the stove and heat on medium, spray the Pam spray and sprinkle the mushrooms and onion and let warm. Spray with Pam once more and pour the eggs in the pan. As he eggs are cooking sprinkle the cheese allowing it to melt as the eggs cook. With a spatula, peel back the sides to allow any excess egg to flow if need be. Move your omelet around to make sure it is not sticking. Just before you are ready to fold your omelet spread your arugula and spinach down the middle of the omelet. Fold the omelet in half and slide it onto your plate. Yummy! |

Notes: The first arugula omelet I ever had was on our Alaskan cruse and I can't get enough of them now. I watched how they did it and practiced at home. I love them. I started adding the spinach and a little onion and mushroom and made a masterpiece.
