8 chicken breast tenders-3/4 lb
1 1/2 tsp coarsely ground black pepper
1/4 tsp salt
8 cups bagged baby spinach
1/2 cup thinly sliced red onion
1 cup fresh blueberries
1/4 cup feta cheese

Pomegranate Vinaigrette
1/2 cup pomegranate juice
3 tbsp. sugar
3 tbsp. balsamic vinegar
1 tbsp. canola oil
1 tsp grated orange rind

Directions:
1. Marinate chicken in balsamic vinaigrette dressing.
2. Cook chicken in a nonstick pan with olive oil, salt and pepper on medium-high heat. Cook 3-4 min on each side or until done.
3. Divide spinach evenly and arrange on serving plates, drizzly evenly with Pomegranate Vinaigrette. Arrange chicken, onion, and blueberries evenly over sprinkle with cheese

For Vinaigrette
1. Combine all ingredients in a small bowl, stir with a whisk.
