4 Tbls. Butter
3 Tbls. Chopped green onions
1/2 lb. chopped mushrooms
2 Tbls. Flour
1/2 cup heavy cream
1/8 tsp. cayenne pepper
1 cup chopped parsley
1 1/2 Tbls. Chopped chives
1/2 Tbls. Lemon juice

Directions:

Sauté onion in butter for 3 - 4 minutes. Add mushrooms and cook 15 minutes or until all moisture has evaporated. Sprinkle with flour and stir. Add cream and bring to boil; simmer for 1 minute. Remove from heat and stir in seasonings. Brush 24 mini muffin pan with butter. Cut 3" round pieces of bread. Press bread into muffin pan. Fill with mushroom mixture. Bake 10 minutes at 400º. Remove and cool.
