Pizza dough, recipe listed
1 cup yellow onions
1/2 cup thinly sliced red bell peppers
1/2 cup thinly sliced green bell peppers
2 tbsp thinly sliced seeded and stemmed jalepenos
2 tbsp. minced garlic
1 tsp Italian seasoning
1/2 cup black olives (optional)
2 cups grated provolone
2 cups grated mozzarella
1 large egg, beaten with 1 tbsp. water to make egg wash
1 cup finely grated Parmesan cheese
Meats: For a traditional Stromboli, add 1/2 lb ham, 1/4 lb pepperoni, and sausage. I typically substitute a spicy Italian chicken sausage and turkey pepperoni. You can also make vegetarian.

1. Preheat oven to 375. Grease a large baking sheet and set aside
2. In a large skillet, brown sausage for about 5 minutes. Discard/drain fat and add onions, bell peppers, and jalepenos. Cook, stirring until very soft, 4-5 min.
3. Add the garlic and Italian seasoning and cook, stirring for one min. Remove from heat and cool.
4. Punch down dough and divide in half. On a lightly floured surface, roll out half of the dough to a large rectangle-10x14in. Spread half of the cooled sausage mixture across the dough LEAVE A ONE INCH BORDER.
5. Layer additional meats (pepperoni, ham) overlapping slightly with provolone, mozzarella and olives.
6. Using a pastry brush, paint the border of 1 long edge with egg wash. Starting from the opposite long end without egg wash, roll up the dough into a cylinder, pinching the edges to seal. Place on a prepared backing sheet and repeat with the remaining ingredients.
7. Let the dough rise 20-30 min.
8. Brush the top of each Stromboli with egg wash. Bake until nearly completely golden brown and starting to crisp-approx. 20 min. Sprinkle with parmesan cheese and return to oven to melt on the dough and golden brown-5 min.
9. Let stand 10 min before serving.

This Stromboli is from Emeril Lagasse. It can easily be modified with meats and spice amounts. It's delicious served with a good tomato sauce!
