3 to 4 sweet potatoes (depending on size of crowd). Cook until tender and drain well.

1/4 cup melted butter

1 cup sugar

1/2 teaspoon salt

2 eggs, beaten

1/2 cup half and half (I use the no fat version)

1 teaspoon vanilla extract

1 cup firmly packed brown sugar

1/4 cup butter, softened

1/3 cup flour

2 teaspoons cinnamon

1 cup chopped nuts (pecans)

Directions:
After draining the sweet potatoes, place in mixing bowl. Mash the potatoes and add the melted butter, sugar, salt, eggs, half-and-half and vanilla extract; blend well.
Pour the mixture into a buttered 9 x 9 inch glass baking dish (or larger if needed). Combine the brown sugar; softened butter, flour and cinnamon; mix well. Add the nuts and pour over the mashed potato mixture. Bake at 350 degrees for 40 min.

This is the main one I use for the family. Brian requested it this past year (2013) and in a "senior moment" I left it in the refrigerator. We had fresh casserole for supper, however, and lots of leftovers!
