"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Place 5 tablespoons of butter, 1/2 cup packed brown sugar, and 1 1/2 cup mashed ripe bananas in a small pan and bring to a boil. Reduce heat; simmer, uncovered 3-4 minutes or until slightly thickened. Add Rum. Set aside to cool.

In large bowl, combine 1 1/2 cup flour, 3/4 teaspoon baking soda, 1/2 teaspoon salt and 1/2 teaspoon of ground cinnamon.

In another large bowl, whisk together: 2 eggs,1/3 cup yogurt, and 1/2 cup brown sugar - along with banana mixture. Stir into dry ingredients, just until moistened.

Transfer to 9x5 greased loaf pan and bake in 350 degree oven for 50-55 minutes or until toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pan to wire rack, to cool completely.
If using a glass baking pan, reduce oven temperature to 325 degrees.

Glaze:
Combine 1/3 c. Confectioners sugar, 1 tablespoon melted butter, and 1 tablespoon of dark Rum and drizzle over bread.
