First made Sept 1, 2014 (Tastes like pumpkin pie in a 13x9)

What you need:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter (I used Blue Bonnet Margarine)
1 can (15 oz) pumpkin (NOT pie mix)
2 pkg (3.4 oz each) JELLO O Vanilla Flavor Instant Pudding (I used Kroger) ***
1 tsp. pumpkin pie spice (I used heaping tsp)
1 8z tub COOL WHIP, thawed *** (I use Kroger)
1 l/2 + 1 TBSP cold mild (I use skim) ***
NOTE *** these things are DIVIDED so read carefully!!

Mix graham crumbs and butter; press onto bottom of 13x9 inch dish

Whisk pumpkin, 1 pkg pudding mix and spice in large bowl til blended. Stir in 2 cups COOL WHIP; spread over crust.

Beat remaining pudding mix and 1 l/2 cups milk in medium bowl with whisk 2 min; spread over pudding layer in dish.

Refrigerate 4 hours. This is where I stopped. I did not use the caramels or the 1 Tbsp. milk suggested.

You can: microwave 8 KRAFT caramels and l Tbsp. milk in microwave for 30 sec; stir until blended and drizzle over dessert before serving.

Healthy living: Save 40 calories per serving by preparing with margarine, 2 pkg. JELLO vanilla flavor fat free sugar free instant pudding, COOL WHIP LITE and fat free milk.

NO PUMPKIN PIE SPICE? Make your own: 1 tsp = 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground allspice and 1/8 tsp ground nutmeg.

I get hungry for pumpkin pie at times. This is especially good recipe for summer since you don't have to heat up an oven. I'm anxious to see how the grandkids like it!
