1 medium onion, cut in wedges
2 cloves garlic, minced
2 Tbsp. curry powder
2 Tbsp. olive oil
2 1/2 lb. boneless chicken (breast or thighs,
skinned and cut 1/4 in wide
14 oz tin of tomatoes
1/3 c raisins
1 1/2 c cooked potatoes cut in chunks
16 oz can green beans (or fresh beans add with tomatoes)

Saute onion, garlic & curry until tender. Stir in chicken, tomatoes, raisins and beans if using fresh. Simmer for about 8 min. Add potatoes nd tinned beans if using and dimmer for 5 more minutes. Season to taste . Serves 4.

Alternately, put all ingredients except potatoes in an aluminium pan & place on a preheated BBQ at 350º. Cook for 15 min stirring every 5 min. Add potatoes and cook another 5 min.

I use tomatoes from the garden when in season or frozen tomatoes but canned will be fine too.
