2 cups chopped carrots
2 1/2 cups chopped onions (sweet)
4 cloves Garlic minced
2 T. Olive Oil
1 can (about 28 oz.) Crushed Tomatoes
1 can (14 oz.) Diced Tomatoes
1/2 of a 6 oz. can of Tomato Paste
4 T. Sugar
2 cups Water
4 tsp. Cumin
2 tsp. Chili Powder
1 tsp. Ground Black Pepper
Sprinkle White Pepper
1 tsp. Kosher Salt
PINCH Nutmeg
1 can (15-16 oz.) of each:
Garbanzo Beans
Red Beans
Great Northern Beans
Black Beans
Kidney Beans
Bay Leaves (optional)
Sour Cream
Cheddar Cheese
Oyster Crackers

Directions:
Directions:
Sautee Carrots, Onions and Garlic in 2 T. Olive Oil for about 10 minutes, stirring occasionally.
Add Diced Tomatoes and saute 5 more minutes, stirring occasionally.
Add can Crushed tomatoes and stir.
Stir in 1/2 can Tomato Paste making sure it's dissolved completely.
Sprinkle in Seasonings mixing well (4 T Sugar, 4 tsp Cumin, 2 tsp. Chili Pepper, 1 tsp Ground Pepper, sprinkle White Pepper, 1 tsp. Kosher Salt, Pinch Nutmeg).

Here's where you can either put this mixture into a pot for the stove or in a crockpot to plug in.

Add 2 cups Water.
Bay Leaves if using.
Add all 5 cans Beans (drained)
Stir well.
Cook on low for either stove or crockpot method for 1 to 2 hours.
Remove Bay Leaves!
Garnish with Sour Cream, Cheddar Cheese, Oyster Crackers and ENJOY!

I used to make this with meat. I replaced the meat with more beans and the result is still so delicious! Could almost pass for meat chili!
