1 1/2 cups milk
1/4 cup firmly packed dark brown sugar
1 Tablespoon salt
3 Tablespoons butter or margarine
2 Pkg. dry yeast
1/2 cup warm water (105 to 115 deg).
1 1/2 cups quick cooking rolled oats
1 cup grated sharp cheddar cheese
4 3/4 cups unsifted flour (approximately)

Scald milk. Stir in brown sugar, salt and butter. Cool to lukewarm. Dissolve yeast in warm water in large warm bowl. Add lukewarm milk mixture, oats, cheese and 2 cups of the flour and beat until smooth. Stir in enough flour to make a soft dough. On floured board, knead until smooth, about 10 minutes. Set in greased bowl, turning to grease top. Cover and let rise in a warm, draft free place until doubled, about 1 1/4 hours.

Punch dough down and divide in half. Shape each half into a ball. Place each ball in a greased 8 inch round cake pan and flatten ball slightly. Slash tops of loaves with an "X". Cover and let rise until doubled in bulk, about 1 hour. Bake at 375 deg. for 35 to 40 minutes or until done, Remove from pans and cool on wire racks.
