1 pork tenderloin filet ( approx. 14 oz )
3-4 oz heavy cream
1 Tbsp gorgonzola cheese
pinch of salt, pepper, chilli flakes and parsley
5 seedless grapes, halved

Directions:
Directions:
Clean pork tenderloin of silverskin as best as you can and cut in half, making two 7 oz portions. Marinate with olive oil, minced garlic, chilli flakes, parsley, salt and pepper for a day ( or at least a few hours ) in advance.

In an oven-safe pan on your stove top, sear pork on all sides with a tablespoon of vegetable oil. Place pork in 400º oven for 6-7 minutes. Turn pieces and bake another 6-7 minutes. Remove pan from oven and rest pork on cutting board. Add all sauce ingredients except grapes to the hot pan. Reduce by half or until the sauce is thick and creamy, stirring occasionally and scraping the goodness off the sides. Over low heat, add grapes and stir until all cheese pieces are dissolved. Slice the pork into 5-6 pieces and fan on a serving dish. Pour sauce over pork and serve hot.
