1 cup chopped onion
1 cup chopped green pepper
1 Tablespoon butter
1 28 oz. can diced tomatoes
1 small can of mushrooms, drained
1 small can of sliced ripe olives, drained
2 lbs. ground beef, browned and drained
12 oz. box of spaghetti, cooked and drained
2 cups shredded mild cheddar cheese
1 can cream of mushroom soup, undiluted
1/4 cup grated parmesan cheese
2 tsp. dried oregano
1/4 cup water

1. In a large skillet, cook onion, green pepper in butter for a few minutes and then add the ground beef and cook until meat is no longer pink. Stir in tomatoes, mushrooms, olives, oregano. Simmer uncovered for 10 minutes.
2. Place half of the spaghetti in a greased 9 x 13 inch baking pan. Top with half of the vegetable-meat mixture. Sprinkle half of cheddar cheese. Repeat layer.
3. Combine soup with 1/4 cup water and pour over the casserole. Sprinkle with parmesan cheese. Bake uncovered at 350 deg. for 35 - 40 minutes or until heated thoroughly.
