Marinade:
1/4 c soy sauce
1/4 c packed brown sugar
2 tbsp. sherry
1 1/2 tsp. dried minced onion
1 tsp. cinnamon
2 tbsp. olive oil
1/8-1/4 tsp. garlic powder

2 (3/4 lb.) pork tenderloin or 1 tenderloin butterflied
2 minced garlic cloves

Place all marinade ingredients in a resealable bag. Rub the inside of the tenderloins with the minced garlic. Tie up with kitchen twine to seal pieces together. Place in bag with marinade. Refrigerate for 6 hours to overnight.

Remove pork from marinade and reserve in a saucepan. Bring marinade to a boil and then simmer to reduce sauce while Pork cooks.
In an ovenproof dish ( preferably cast iron) sear the pork on all sides until browned. Place in preheated 350º oven and cook 10-15 minutes, pour reduced marinade over pork, continue to cook 10-15 minutes, depending on the size of the tenderloin. A thermometer should reach 160 degrees.
