8 chicken drumsticks
Marinade:
1/2 c. ketchup
1/2 c. honey
2 tbsp soy sauce
1/3 c. coconut oil or vegetable oil
grated zest of 1 lemon plus
2 tsp lemon juice
1 tsp crushed fresh red hot pepper( or dried red pepper)
1/4 tsp hot chili sauce, schricha
1/4 tsp grated ginger
1/4 tsp grated garlic
salt to taste

Combine all marinade ingredients in resalable bag. Adjust seasoning to your taste. Add chicken drumsticks or use thighs or breasts. I sometimes use a combination. Marinate for at least 1 hour.
Preheat oven to 400º. Place chicken pieces on foil lined baking tray and spoon a bit or marinade over top. Cook 20 minutes. Turn over and cook an additional 10-20 minutes, baste again. If desired broil for the last 5 minutes of cooking.
You can also BBQ the chicken over medium heat.

I love this marinade as it is a bit spicy and sticky sweet. I grow a little spicy pepper that I only use a bit of but red pepper flakes works well too. Sometimes we like chicken thighs or breasts. I think it is best with the bone in as it keeps the moisture in the meat. This is great with a corn, edamame and grape tomato salad or with rice.
