1/4 cup chopped onions
1 T vegetable oil
1/2 cup uncooked long grain rice
4 cloves garlic minced
1 cup beef broth
1 1/2 lbs ground beef
3/4 cup corn
3/4 cup picante sauce
1/2 cup crushed tortilla chips
2 tsp taco seasoning
opt: shredded cheese, chile peppers

Directions:
Directions:
sauté onion in oil until tender, stir in rice and garlic. cook and stir about 5 minutes or until rice is golden, add broth. Simmer covered for 10-15 min.
remove from heat, cool for about 20 min.

In a large bowl combine beef, corn, picante sauce, chips and taco seasoning. Stir in rice mixture.

pat mixture into loaf pan bake 350º 1 3/4 hours

let cool for 10 minutes, if desired, top with additional picante sauce, cheese and/or peppers
