3 lbs. stuffing mushrooms
1/3 c. + 4 T. butter
1 clove garlic
1 small onion minced
1 tsp.. sea salt or Kosher salt
1/4 tsp.. pepper
1/2 c. panko
1 c. bread crumbs

Directions:
Heat oven to 350º. Wash mushrooms and drain. Pull the stems out of the mushrooms and chop small. Put aside. Set up the mushrooms in trays for stuffing as you pull out the stems. Mince the garlic with the Kosher salt. Mince the onion. In a large saucepan, melt the 1/3 c. butter. Saute the garlic. Add the mushrooms and onions and saute until they sweat off the juice.Mix the panko and the breadcrumbs. Add to the mushroom mixture and saute until the juice is absorbed and the mixture sticks together. Add the pepper. adjust and seasoning if necessary. Remove from the heat. Stuff each cap once and then go back and add to each mushroom until the breadcrumb mixture is used up. Melt the 4 T. of butter in the microwave. Spoon a bit on each stuffed cap. Bake approximately 10-15 min. until the mushrooms are hot and soft. Serve immediately.
