1/2 cup Homemade Italian Seasoning
-- 1 tsp. dried thyme
-- 1 tsp. dried basil
-- 1.5 tsp. crushed dried rosemary
-- 1 tsp. marjoram
-- 1 tsp. rubbed sage
-- 2 tsp. coarse sea salt
-- 1/2 tsp. black pepper

1 whole bone-in leg of lamb (3 lbs. for 3-4 people)
1/4 cup olive or walnut oil
1/2 cup brandy

Scatter the seasoning all over the lamb and pat with your fingers to help it adhere. Set the seasoned lamb on a rack in a roasting pan and refrigerate for at least 12 hours or up to 24 hours.

Remove the lamb from the refrigerator to take the chill of while you preheat the oven to 550º. In a small bowl, stir together the oil and brandy to make a glaze.

Put the lamb in the oven and roast until starting to brown, about 20 minutes.

Brush the lamb with the glaze and reduce heat to its lowest setting (150º to 175º)

Roast for 4-6 hours, brushing with more the the glaze every hour, until an instant read thermometer inserted into the center of the mean (but not touching the bone) registers 135º.

Transfer the lamb to a carving board, tent loosely with aluminum foil, and let rest for 15 minutes.
