¾ cup
½ teaspoon salt
4 cups milk, scalded
½ teaspoon vanilla
nutmeg

Beat eggs slightly. Add sugar, salt, milk and vanilla. Pour into greased 3 quart casserole or individual custard cups. Place casserole in a pan which contains enough water to come halfway up the sides of the casserole or individual custard cups. Bake at 325° for 50 to 60 minutes for 3 quart casserole; about 45 minutes for 8 individual custard cups. Test a baked custard by inserting a knife in the center of the pudding. If knife is only slightly coated remove custard. The heat of the casserole will finish the cooking. If baked custard is overcook it become watery.
