4 -5 lb. beef brisket
2 large onions, sliced
3-4 potatoes, quartered
4-5 carrots, cut in chunks
catsup
fresh ground pepper
salt, to taste
water, or beef broth, or both

Directions:
Directions:
Use a roasting pan, with lid. Set oven to 350º. Roast brisket at 1 hour per pound. Put water or beef broth in with brisket, to almost cover brisket. Cover top of brisket with catsup, add sliced onions. When half way done, turn brisket over, cover with more catsup and add potatoes and carrots. When done, remove brisket and allow to sit 10 - 15 minutes. Then slice across the grain and serve with veggies and the gravy.
