1 lb sausage (hot or sweet)
1 white potato for every sausage link- peeled and cut into pieces
1 large white onion (can add another if desired)
salt, pepper, parsley, oregano
Directions:
Directions:
Coat casserole dish with olive oil then add potatoes, salt, pepper, parsley, and a little oregano. Add 2 tablespoons of oil and mix by hand to ensure all coated lightly with oil
Add sausage, mix together, then cover with foil and bake at 400 degrees for 20 minutes. Remove foil, mix, and cook uncovered until browned and potatoes are soft.
