3 lb chop meat
2-3 eggs
1 1/2 teaspooons dried parsley or 1 handful fresh
1/2 cup grated cheese
3 large cloves garlic crushed
salt and pepper to taste

Mix above ingredients then use food processor to chop bread into crumbs (use 3 slices of bread per pound of meat - use dense bread).
Add bread to meat mixture slowly to reach desired consistency (may not need all bread depending on desired consistency).

Roll into balls, heat oil in pan, fry on medium to medium-high heat (do not use high heat as it will burn)

To Make Gravy:
Drain oil after meatballs fried, then cook sausage and/or boneless pork chops/butt and drain oil from this. Place all meat on the side to add later.

In pot add 1 small finely chopped onion and 1 clove chopped garlic per large can of tomatoes. Once onions are slightly soft add tomatoes (best tomatoes are whole that you break down in food processor and those packed in basil are good)

Stir continuously and once comes to a boil reduce heat to medium-low. Add oregano, basil, salt and pepper to taste. Cover with pot not completely sealed and simmer on low. Add meat and let cook, ensuring you use 2-3 cans of tomatoes per pound of meat as meat soaks up sauce. Simmer stirring periodically for 1-2 hours depending on amount made.
