Ingredients:  
1 medium eggplant
1 tbsp. dry onion
1/2 cup bread crumbs (or plain flour)
1 tsp. baking powder
1 egg, beaten
Directions:
Directions:
Peel eggplant, cut into cubes and cook in salted water until tender.
Drain well and mash. Stir in other ingredients and mix well.
Drop by tablespoon into hot oil in a skillet. Flatten slightly, fry until golden brown.
