3-4 canned jalapeno peppers, seeded
10 oz. sharp cheddar cheese, grated
4 eggs, beaten

Directions:
Preheat oven to 225º. Arrange strips of peppers on bottom of a greased 7x11" baking dish. Sprinkle cheese over peppers. Pour eggs over all. Bake 45 minutes. Cut in to bite sized squares. Keep warm. Serve with toothpicks.
