2 Butternut Squash
3 tablespoons butter
1/4 cup flour
3/4 cup light cream
1/4 cup maple syrup or maple sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
dash nutmeg
4 egg yolks
4 egg whites
1/4 cup brown sugar
2 tablespoons onion

Directions:
Directions:
Prick holes in squash and microwave for 4 minutes on each side Cut lengthwise and remove string and seeds
Place pulp along with onion in the food processor

Melt butter then add flour, milk, and syrup - stir
Beat egg yolks one at a time into mixture (beat well)
Fold squash into mixture then beat egg white until stiff and add slowly to squash mixing well

Butter soufflé dish, add mixture and bake at 375 degrees for 35-40 minutes
