3 T. olive oil
3 lb trimmed pork shoulder cut into 3 in. pieces
salt and pepper
1 lb sweet italian sausages
3 oz pancetta 1/4 in. dice
1 lg onion coarse chop
8 garlic cloves coarse chop
2 med carrots 1/2 in. pieces
1 c. dry red wine
28 oz tomatoes juice reserved
Tomato puree 28 oz
Mushrooms
2 thyme sprigs
rosemary sprig
1/2 c. water
2 lb spaghetti
Fresh ground pecorino for serving

Directions:
Heat olive oil. Season pork with salt and pepper and cook over over mod high heat until rich brown all over. Add sausages and cook until brown. Add pancetta and cook. Add onion, garlic, carrots and cook til softened about 8 min. Add wine and boil until reduced by half about 4 min. Add tomatoes and juices and puree and bring to boil. Add thyme and rosemary and water.
Cover and cool on high 2 hours. Transfer sausage to bowl and cover. Cook sauce 2 hours longer until pork is tender.
Transfer pork to bowl and shred coarsely with forks. Coarsely break up sausage. Return meats to cooker and simmer for 30 min longer. Season with salt and pepper
Cook spaghetti in salted water.
Serve with sauce and cheese

If too much pork shoulder, substitute more Italian sausage and ground veal or beef or pork.
