1 1/2 lbs. ground beef
1 1/2 tsp. salt
1/8 tsp. pepper
1 egg
1 T. minced onion
12 c soft bread crumbs
1 T flour
1 (1 lb.) can tomatoes, cut up
1 c. water
1/2 tsp. salt
2 tsp. sugar
1 tsp. basil leaves
3 medium potatoes, peeled and cut in chucks
4 small carrots, peeled and sliced (thick)
1 medium onion, coarsely chopped
2 stalks celery, sliced

Directions:

Combine meat, 1 1/2 tsp. salt, pepper, egg, onions and bread. Mix lightly, but well.

Form into 1 inch balls; brown in hot oil in skillet. Remove meatballs as they brown; place in 2 qt. casserole, pour off fat, reserving 3 T.

Blend flour into reserved fat. Stir for 10 minutes-add more water if necessary. Put vegetables over meatballs and pour sauce over all. Cover.

Bake 350º for 1 hour or until vegetables are tender.
