4 T. butter or margarine
18 Graham Crackers-rolled

1 c. finely chopped dates
1/2 c. finely chopped walnuts

3 egg yolks
2 c. milk
1/2 c. sugar
2 T. corn starch
pinch of salt

3 egg whites
3 T. sugar

Directions:
Directions:
#1 Mix together the butter and graham crackers. Reserve 1/3 c. for topping. Press the remainder of the crumbs in bottom of a baking pan. Bake 10 min at 300º.

#2 Spread the dates and walnuts over cracker crumbs in pan.

#3 Beat egg in top of double boiler-add milk, 1/2 c. sugar, 2 T. corn starch, pinch of salt. Cook in double boiler until thick. Cool. Pour over dates, nuts and crumbs like a filled pan.

Beat egg whites and 3 T. sugar until quite stiff: spread over custard and top with reserved crumbs. Bake 30 mins. at 300º.

Cool and serve with whipped cream.

Can be made the day before. Store in cool place but NOT IN FRIDGE. 5 times makes 2 cookie sheets.
