1 basin of fresh mangoes

You can use the amount of fresh mangoes as fills 1/2 to 3/4 of your pressure cooker size.
Wash mangoes and then put them into the pressure cooker, skins and all. Pressure cook with 1-2 c. water on high for 10 minutes or so, until it is good and steamy. Open cooker. Let the steam subside and then mash mangoes with a potato masher, until the juice and pulp separate from the mango seed (it will slide off!). Let cool until you can touch the pulp, and with clean hands remove the skins and pulp from the puree - pushing it through a strainer is helpful. Now, you can freeze in freezer bags or use immediately for mango bread, mango butter, smoothies, or whichever mango recipe you wish!
