3 c. cooked or canned white beans
1 c. chicken broth
3 tbsp. olive oil
salt and pepper
2 tbsp. mustard
paprika
cayenne pepper
1/2 c. shredded cheese

Directions:
Directions:
Warm beans on stove; puree with broth until smooth. Put back in sauce pan. Add everything else in and gently stir until heated through and cheese is melted. (Add more liquid as desired. The beans tend to get thick the longer they sit.)

Serve over noodles.

This is an excellent way to get picky eaters to eat some protein. My son "hates" beans, but he cleaned his bowl and went on to have 2nd's and 3rd's!
