1/8 c. mayonnaise
1/8 c. sour cream
1 chipotle in adobo, minced
5 fresh basil leaves
bread (Focaccia rolls work well)
olive oil
1 1/2 cup cooked chicken, cut in strips
1 tomato
red onion
mozzarella cheese

Directions:
Directions:
In a small bowl mix together the mayo and sour cream. Stir in the chipotle pepper and basil. Set in the fridge for 1 hour. To assemble the panini, slice the bread, brush the insides with olive oil. Heat griddle on medium heat and place the rolls, oil side down until they turn a nice golden brown. Smear the chipotle spread on each piece of bread. Assemble sandwich with all other ingredients. Press sandwich down hard with a spatula until the cheese is melted and gooey.
