3 medium-sized eggplants
1/2 c. tahini (sesame paste)
1 1/4 tsp. coarse salt
3 tbsp. lemon juice
3 garlic cloves, peeled and grated into a pulp
pinch of ground cumin
1/8 tsp. chile powder
1 tbsp. olive oil
1/2 bunch fresh parsley or cilantro (optional)

This dish is similar to hummus, but uses roasted eggplant as a base instead of chickpeas.

1. Preheat oven to 375º F
2. Prick each eggplant a few times, and char the outside by placing the eggplant directly on the flame of a gas burner. Rotate and char evenly for 5 to 10 minutes (length of time is based on how 'smoky' you want the dish to taste)
3. Place eggplants on a baking sheet and roast for 20 to 30 minutes until completely soft. You should be able to poke a knife through without meeting any resistance.
4. When the eggplant is cool enough to handle, split and scrape out the pulp.
5. If you have a food processor: purée the pulp until smooth along with other ingredients
No food processor: mash as best you can with a fork and then mix in other ingredients

Great as a dip or a spread.
