1 c. sliced carrot
1/2 of a green pepper, chopped
1/2 c. chopped red onion
15 oz. of pumpkin (can or fresh)
1 14 oz. can of coconut milk
14 oz. of chicken broth
2 tbsp. brown sugar
1 tsp. salt
1 inch piece of ginger squeezed (or 1/2 tsp ground ginger)
1/2 lb. sausage

Directions:

in a large sauce pan cook sausage, carrot, green pepper, and onion until browned.
add everything else to the pot. Bring to a boil. Reduce heat and simmer for 10 min.
