8 c. beef broth
4 tbsp. unsalted butter
4 tbsp. olive oil
1 kg. thinly sliced onions
1/2 tsp. sugar
Salt, to taste
1 tsp. pepper
1 1/2 tbsp. flour
1/2 c. dry white wine (or apple juice)

Carmelize onions: in a heavy saucepan over medium heat, melt the butter with 1 T. olive oil. Add in the onions, stir some, until golden (4-5 minutes). Then reduce heat to low, cover and cook, stirring occasionally, for 15 minutes. Then uncover, add the sugar and 1/2 tsp. salt, and cook, stirring occasionally, until the onions are caramelized, about 25 minutes. Add the flour and stir for 2-3 minutes.
Simmer the soup: Before you add the flour to the onions, in another saucepan bring beef broth and wine to boil on high. Then, slowly add the onion/flour mixture in, stirring each batch until it thickens before adding more. Add pepper. Reduce heat to medium, cover partially, and simmer until the onions break down and melt, approximately 45 minutes.

If you are using beef bouillon cubes instead of beef broth, be careful not to add extra salt as well.
