1 c. flour
1 c. milk
1 tbsp. oil
2 eggs
1 tsp. vanilla
1 tsp. salt

Directions:

Mix ingredients together and stir well with a whisk or even a blender. Good to over-stir (you can even do it the night before and let sit in fridge). Heat skillet on high and spread ghee or butter from center, then towards outsides evenly. Turn lower as you add the crepe. Hold pan with one hand, ready to rotate, and add a generous tablespoon of crepe mixture to very center and immediately turn (roll) pan around to spread dough to flat, thin round. When glossy on top and outer edge beginning to brown, flip. Then cook on other side for a few seconds before removing.
Toppings: yogurt, fruit, powdered sugar with lemon juice, nutella, caramelized or flambeed bananas, jelly, honey, syrup.
