½ cup (125g) butter, softened
1 cup (175g) brown sugar
1 tsp vanilla extract
2 eggs
2 bananas, mashed (about 1 cup)
1½ cups (225g) flour, sifted
1 tsp baking powder, sifted
½ tsp baking soda
1 tsp cinnamon
1 cup (160g) sultanas (raisins in Canada)
¼ cup (90g) golden syrup (corn syrup in Canada)

Directions:

Preheat over to 325°F (160°C).
Cream butter, sugar and vanilla in mixer until pale and creamy. Gradually add eggs, beating after each addition. Add banana, flour, baking powder, baking soda, cinnamon, sultanas and golden syrup, mixing to combine. Spoon the mixture into a lightly greased loaf tin (7cm x 32 cm) lined with baking paper.
Bake 1 hour and 35 minutes or until cooked when tested with a skewer.
Allow cooling in the tin.
