2 large navel oranges (choose oranges with unmarked skin as the whole orange including skin is used)
5 eggs
1 cup (250g) sugar
1 cup (250g) ground almonds
1 tsp baking powder
1 tsp icing sugar

Directions:
Directions:
Place whole oranges in a saucepan and cover with water. Bring to the boil and simmer for 45 minutes with the lid on. Drain and cool, reserving 2 Tbsp of liquid. Place cooled oranges into a blender and purée until smooth and thick, adding reserved liquid as needed (you may not need any). Keep the purée as dry as possible. Beat eggs with sugar until thick. Add orange purée, ground almonds and baking powder. Pour into a 10-inch (23 cm) greased tin that has been lined with baking paper.
Bake in a moderate oven (350°F / 180°C) for 1 hour. Leave to cool in tin.
Cake will be moist. Sift icing sugar and add orange zest on the top before serving. Serves 8-10.
