1 cup (250g) butter
½ cup sugar
2 eggs, separated
2 cups corn flake crumbs
2 tsp vanilla
2 cups flour
2 tbsp lemon juice
rind of 2 lemons and 2 oranges, grated finely
glace cherries for decoration (quartered or smaller)

Directions:

Cream sugar and butter thoroughly. Add yolks of eggs and all flavourings. Beat well. Add flour and beat until very light. Place in the fridge for several hours. Roll into very small balls (these are dainty biscuits). Dip in slightly beaten egg whites, then roll in cornflake crumbs. Press ¼ cherry in the centre. Bake at 350°F (160° C with fan) about 15 minutes. Bake them well...but lightly. Do not brown!

This was, and continues to be, a favorite Christmas treat in our home. I think the flavours infuse the dough if left longer. I have left the dough in the fridge for over a week.
