2 cups flour sifted 4 times
1½ tsp baking soda
¾ tsp salt
1 1/3 cup sugar
½ cup soft butter
½ cup sour milk
1 cup mashed ripe bananas
2 eggs, unbeaten
1 tsp vanilla
Topping:
¼ cup butter
¾ light brown sugar
1½ Tbsp cream
½ cup shredded coconut

Directions:
Directions:
Sift dry ingredients into bowl. Add butter, ¼ cup sour milk and mashed bananas.Mix until moist then mix for 2 minutes by mixer on low or 300 strokes by hand. Add eggs, remaining ¼ cup sour milk and vanilla. Mix on low speed 1 minute or 150 strokes by hand. Pour into 8" by 8" pan with only the bottom greased. Bake at 375°F for 35-45 minutes.
To prepare topping, cream butter with sugar. Add cream and beat until smooth. Add coconut. When cake is done, place topping on it and then put it under broiler until deep golden.
*** Keep a close eye as it can burn in seconds!
