2 T oil, divided
6 garlic cloves, sliced
2 fresh red chilies, sliced
1 lb. ground beef
1/2 c. chicken broth
3 c. fresh basil, divided
2 carrots, grated
2 scallions, sliced
4 T lime juice, divided
2 T soy sauce
1 T fish sauce
1 tsp. sugar
Chow mien noodles or mung bean noodles fried, optional
Steamed rice and lime wedges for serving

Heat 1 T oil in skillet. Add garlic and one chili and cook 30 seconds. Add ground beef and cook 8 to 10 min until brown. Add 2 c. basil and chicken broth and cook 2 min. Season with salt and pepper. Keep warm.

Toss carrots, scallions, remaining chili and remaining basil, julienned, 1 T oil, 1 T lime juice in a small bowl. Season with salt and pepper.

Mix soy sauce, fish sauce, sugar and 3 T lime juice in another bowl.

To serve, put on plate in this order: rice, beef, carrot slaw, soy dressing, noodles, limes

You can find Asian fish sauce, chow mien noodles and mung bean noodles in the Oriental section of most supermarkets. Mung bean noodles cannot be eaten out of the pouch... must be fried a few at a time in hot oil for a few seconds.
