2 lbs. stew beef in 1 inch cubes
1/4 c. cooking oil
1 1/2 c. chopped onion
1 (lb.) can tomatoes, cut up
3 T. quick-cooking tapioca
1 (10 1/2 oz.) can consume
1/2 c. sliced celery
1 T. parsley flakes
2 1/2 tsp. salt
1/4 tsp. pepper
1 bay leaf
6 medium carrots, pare, cut in strips
3 medium potatoes, pare, cut in chunks

Directions:
Directions:
Brown beef on all sides in hot oil in large skillet. Add all ingredients except vegetables. Bring mixture to a boil. Turn into 3 qt. casserole. Cover.

Bake in 350º oven fir 1 1/2 hours or until meat is tender.

Add vegetables, covered, for 1-2 hours or until vegetables are tender. Time depends on size of vegetables. Longer cooking develops flavor.
