½ orange
1 tart apple such as Granny Smith or McIntosh
3 c. fresh cranberries
1¼ c. sugar
½ tsp. cinnamon
¼ tsp. ground cloves

1. Squeeze juice from orange half and set juice aside. Remove membrane from the inside of the orange shell and discard. Cut the shell into a small dice. Put in small saucepan with water. Bring to a boil and cook 10 minutes. Drain and set aside.
2. Peel, quarter and core the apple, then chop into small pieces. Place in saucepan. Sort cranberries, discarding any soft ones. Add to apples along with reserved orange peel and juice. Add sugar, cinnamon, and cloves.
3. Bring to a boil, reduce heat to simmer and partially cover. Simmer gently, stirring occaisionally, until sauce thickens and cranberries burst - about 10 to 15 minutes. Serve at room temperature.

This is the only cranberry sauce I make. Everyone loves it. Make two batches at Thanksgiving and freeze the second batch for Christmas. Lasts literally forever in the fridge and freezer!
