Base:
2 cups flour
1 cup butter
½ cup icing sugar
Topping:
4 eggs, beaten
zest of 1 lemon
1/3 cup freshly squeezed lemon juice
1½ cups sugar
¼ cup flour
½ tsp baking powder

Directions:
Directions:
Mix base ingredients together with a fork and press into a greased and floured 9" x 12" pan. Bake at 350°F for 20 minutes.
To prepare topping: Beat eggs with lemon juice, zest, sugar, flour and baking powder. Pour over crust. Bake for another 20 - 25 minutes (don't overbake). Crust will be lightly golden at edges. Cool and dust lightly with icing sugar using mesh strainer. Cut into squares.

I prefer a tangy lemon flavour so use less sugar (¾ - 1 cup) in the topping.
