Ingredients:  
Ingredients:  
Beat 3 eggs
Add:
1 c oil
2 c sugar
1 tsp vanilla

Mix together separately:
2 c flour
1 tsp salt
1 tsp soda
1/4 tsp. Baking Powder
1-3 tsp cinnamon
Dash of Ginger
Dash of Nutmeg
Dash of Ground Cloves
1/2 c nuts (optional)
2 c shredded zucchini

Directions:
Directions:
Mix together wet ingredients, add dry ingredients and zucchini and stir by hand.
Pour into 2 greased loaf pans.
Bake at 325*
60-75 minutes

Mom got this recipe from my cousin Ginger Gittens many years ago. I think this is the best of the many zucchini recipes out there.
