Ingredients: 1 (14 oz.) pkg kielbasa, sliced 2 tsp. olive oil 1/4-1/2 onion, diced 1/2-3/4 bell pepper (any color), diced 8 oz. bow tie pasta, cooked and drained 1 zucchini, sliced into thin rounds 5-10 asparagus spears, sliced into thirds 1/2 c. vegetable broth 1 can diced tomatoes & green chilies, drained 1 (15 oz.) can white beans, drained & rinsed 2 c. baby spinach 1/4 c. fresh Parmesan cheese

Directions:1. Cook pasta according to package, drain and set aside. 2. In a large skillet heat olive oil on medium-high heat and sauté the kielbasa, onion, and bell pepper for about 5 minutes or until sausage is golden brown on both sides. Transfer to a plate. 3. Add the zucchini, asparagus, and vegetable broth to the skillet and simmer for about 5 minutes. Add tomatoes, beans, and spinach and continue to simmer to 1-2 minutes or until spinach is wilted. 4. Turn the heat to low, add the pasta and smoked sausage with onions and bell peppers to the skillet. Mix to combine. Add fresh parmesan cheese. Serve warm. |
