2 quarts chicken broth/stock
2 cups raw lentils (rinsed)
Salt and Pepper
2 medium onions, chopped
2 celery stalks, chopped
2 medium carrots, chopped
3 garlic cloves, minced
1/4 cup EVOO
1/4 cup chopped parsley
1 teaspoon oregano
2 bay leaves
1-28 oz. can tomatoes chopped with their juice
Red wine vinegar to taste

Directions:
Directions:
Simmer lentils in broth with salt and pepper to taste for approximately 1 hour.
Add remaining ingredients.
Continue to cook for approximately 30 minutes; or if desired, more vinegar can be added.
