1 large eggplant
3 eggs
Bread crumbs
1 jar pasta sauce
Salt, pepper, garlic hot pepper flakes to taste
Vegetable oil

Directions:
Directions:
Peal eggplant and slice thin.
In a bowl, crack eggs and whisk.
In another bowl, fill half way with bread crumbs.

Take each slice of eggplant and dip it in the egg to coat. Remove from the egg and place in the bread crumbs to coat.

Heat a skillet over medium heat with vegetable oil, filling the skillet about 1/4 of the way.

Place the coated eggplant slices in the hot skillet and brown on both sides. (Pay attention to the heat of the skillet. You may need to turn it down to medium/low as you go)

Meanwhile, in a baking dish, cover bottom with pasta sauce.
Place a layer of eggplant on the bottom. Cover this with more pasta sauce.
Sprinkle with salt, pepper, finely chopped garlic and a few hot pepper flakes.

Continue to layer on the eggplant and repeat the sauce and spices with each layer.

Cook in a preheated oven at 350º for 30 minutes.
(If desired, 10 minutes before done, add a layer of cheese on top)
Serve with pasta of your choice .
