8 flattened chicken breasts
1 lb. sliced ham
2 lbs. Mozarella cheese, sliced or shredded
or several Swiss cheese slices
3 cups crushed Ritz crackers
About 1 cup cheddar cheese, shredded

Directions:
Directions:
Preheat oven to 350º. Flatten chicken breasts. Grease 9 x 13 pan; place 1/2 of chicken in a single layer on the bottom.
Cover with 1 1/2 cups crackers. Place a layer of Mozza or swiss cheese over crackers, then all the ham, then another layer of cheese. Place the remaining chicken on the cheese. Sprinkle the cheddar cheese on the chicken and cover with remaining crackers. Cover and bake for 1 3/4 hours.(check after 1 1/4 hours). Remove cover and bake for another 15 minutes.

This makes a very large recipe. I have done it with just one layer of chicken and 1 layer of mozza cheese, to cut back on the size. Takes less time to cook.
