Six pounds of Apples (6 cups of Apple Juice
Sugar (or other sweetener)
Cinnamon (optional)
Pectin (I used three boxes of Sure Jell)

Directions:
Juice Apples.
Measure Sugar. In a small bowl, use 1/4 cup of the sugar & mix with Pectin. Keep separate from other sugar.
In a large pot, mix the apple juice with the pectin/sugar mixture. Cook on stove at medium to high heat (stirring often to prevent burning). It should take 5 to 10 minutes to get it to a full boil (the kind that can not be stirred away).
Add remaining sugar (or other sweetener) and bring it back to a boil.
Boil hard for one minute.
Fill the half pint jars to 1/4 inch of the top, wipe away any spilled jam. Cap with two piece lid.
Put jars in boiling water canner.
Jars should be covered with at least one inch of water. When water is boiling, time for ten minutes.
Remove your jars of jelly from canner & cool.
Wipe jars & mark with name of jelly & date.
