1 c. water
3 1/2 c. flour
2/3 oz. yeast (2 1/2 pkgs)
2 1/2 tsp. salt
1 egg
course salt
2 tsp. baking soda
2 c. water

Directions:
Directions:
Mix together 1 c. water, flour yeast and salt to make a stiff paste. Knead it well. Leave to rise in a warm place covered with a cloth for 1/2 hour. Roll out dough into pretzel shapes. Heat 2 c. water with 2 tsp. baking soda to boiling. Plunge pretzels into boiling liquid. They will fall into the bottom of the pan. When they rise to the surface, remove them to a baking sheet. Brush with beaten egg and sprinkle with coarse salt. Bake at 400º until golden (about 15 minutes).
